Mojito:
- 8-10 mint leaves
- 1 oz simple syrup
- 2 oz white rum
- 3/4 oz lime juice
- Soda water, to top
Muddle mint leaves and simple syrup in the base of the glass. Add the remaining ingredients (except the bitters), then top with ice until the glass is 3/4s full. Stir vigorously until the glass is frosted. Top with soda water and garnish with a fresh mint sprig.
